Monday Musings…

Hope everyone had a wonderful weekend.  Our Easter was lovely and we got to celebrate Saturday and Sunday both, which was very nice.  That’s what happens when you have a lot of family 🙂

I tried the Pineapple Casserole that my friend, Vicky, gave me and it was a huge hit.  Who knew?  Don’t be nervous, it’s not MY recipe!  Here it is if you’re curious:

1 20 oz. can crushed pineapple in juice

1-1/4 cups sugar (it called for 2 cups, but was fine with less)

4 cups bread cubes (I used white, but I think any bread would be good)

1/2 cup milk

3 eggs

1/2 cup butter, diced

Cube the bread and put it into a casserole dish.  Pour pineapple and juice over bread.  Beat the eggs and milk together, add sugar and pour over the bread.  Sprinkle butter on top, then mix in.  Bake at 350 degrees for about 40-50 minutes, stirring occasionally.  It was delish!  Maybe next time I’ll try Spenda and see how it is.  I would think it would work well…

    1. I had a lovely but tiring weekend! It’s nice when a lot of the kids come over, but then it’s me cooking, which isn’t always so great, lol. Thank goodness even I can’t do much to ruin ham! Hope your weekend was good, as well 🙂

      2. Naw, it was okay, mostly kids and stepkids. I appreciate what my mom and aunts and mom-in-law went through the older I get, lol!

  2. Sounds delicious! I would think that the splenda would work, too. I hope you had a great Easter, Diane. I’m with you – it was exhausting! No way could I go and work out, I have an Easter hangover!

    1. Well, I just got back from working out and I’m okay. Just when I think I can’t do this anymore, it’s too wearing, it gets a little easier. And you’re the one who got me thinking about Splenda with the finger paints, lol!

  9. I think this sounds scrumptious like a baked French toast dessert. The eggs, milk and toast with pineapple, sound great and soft to eat. I also think you would like the pretzel buttery crust with cream cheese cake layer and pineapple on top with sprinkle of pretzels, Diane. It is so sunny looking! We ate candy for our dessert. Lol 🙂 When I go to sons and DIL house or daughter’s they make dessert. Up at Mom’s we eat candy! 😉

    1. Well, it was easy and someone gave me the recipe. My carrot cake was good, but half came out of the pan and half didn’t, lol. Slapped some cream cheese frosting on and no one was the wiser! I should have taken a picture, though, lol.
