Tonight We’re Ordering Pizza…

I’ve mentioned before that cooking is not really my strong suit.  You can find my story about my small, fall kitchen fire here.

Everyone in my house is kind of sick and coughing, including me. And my head hurts.  So last night I decided I’d make a healthy, homemade chicken pot pie with all that yummy chicken broth and fresh veggies and white meat chunks of chicken.  I found my Pioneer Woman cookbook and used her recipe for pie crust.

I mixed flour, butter, water, an egg, white vinegar and salt together. It looked great.  Then I noticed the bag of flour said self-rising (which has salt and baking powder added.)  Crap.  I tasted the dough and it was pretty salty.  And I was afraid it would puff up all out of the dish and not hold the filling.

I didn’t know what to do so I added grated cheese and herbs — not sure why I thought that would help, I hoped maybe it would cover up the saltiness — and made biscuits out of the dough.  They ended up somewhere between pie crust and biscuits, very cheesy, salty and crisp.  I pretended it was a new recipe I found on a cooking blog 🙂

  3. I used to say, “I made this with love.” Which became code word for, hmmm you probably don’t want me to make this again, but hey what the heck at least it’s dinner. 🙂

    1. Well, they ate it but they’re usually pretty grateful when I cook at all! Hubby says I have other redeeming qualities 😉

  10. I have three words for ya: Pillsbury. Pie. Crusts. You’ll find them in the dairy case and they taste just like home made. Even better than that, they’re EASY!

    1. My family goes back and forth. Hubby especially adores when I cook. He old-fashioned that way so I do try. The kids could eat out all the time. I love to cook for parties and holidays, not do much the everyday grind. I have other talents 😉

      3. LOL Oh, I am limited in what I can cook. Lasagna, roast pork, steak, pepper steak. But there are days you just got to go out and get some air and relax. No thoughts of dishes or home.

  13. Laughing because I also use self rising dough for cookies once – and it was when I was in a pinch to bring baked good somewhere – anyhow / cool that u were still able to make something with your dough!

  16. I Love It! The ending part made me laugh! (call it Piscuts) sorry everyone’s under the weather, nothing to like there. I’ve made cooking mistakes, usually throw it off the porch, some unknown varmints always eat it. But from this day forward I shall remember your creativity and name it something else.     1. Hah hah, no it really was different! But it was sort of like Chicken ala King with the sauce over the biscuits so they were okay. Not super healthy with all the salt… 🙂
